Ingredients for the 'caraotas' or black beans:

1 pound of black beans
2 medium sized onions
1 red pepper
Onions
Sweet chili
Salt and pepper
1 teaspoon of cuminseed or ‘comino’
One large chunk of chops or smoked ribs
White rice
1 or 2 bananas
Coconut milk

Preparation:

1. Fill a pot with enough water to cover the black beans. When it boils put the beans inside with salt, and the chops or ribs. Let it cook for approximately one hour until the beans are soft and the meat is tender.

2. While the beans are cooked, chop and fry the onions, pepper, chili along with salt, pepper and the cuminseed.

3. 15 or 20 minutes before turning off the beans, mix them with the previous fried vegetables until the water has been consumed a bit.

4. Once the meat is done, take it out and proceed to shred it. Once it's cold, start tearing with your fingers the pieces of meat, shredding it to bits, disposing of fat and skin. Then cut the rest of the ingredients 'juliana' style.

5. Season the meat with onions, pepper, tomato and lastly, the coconut milk. Let it consume until a salsa is made. It should be juicy, not as dry.

6. Slice the bananas in transverse cuts that should be small but not too thin. Fry them in very hot cooking oil until they're browned.

7. Once everything's set, serve one bowl of white rice, one bowl of beans, one portion of shredded meat and cover with the banana.
