Hispanic Heritage Month






"Lomo Salteado" or Sauteed Beef Loin (or Ribs)
Ingredients:

2 pounds of beef loin or ribs
3 medium sized onions, sliced in eight.
4 pounds of white yams to fry
4 pieces of fresh, yellow pepper, chopped in fine slices (if yellow pepper is not available, use green chili)
4 tomatoes, no skin, chopped in eight
2 tablespoons of chopped parsley
1 tablespoon of vinegar
2 tablespoons of soy sauce
8 ounces of cooking oil
1/2 teaspoon of lemon juice
Salt and pepper
1 cup of rice

Preparation:

1. Fry on a pan with half a cup of hot oil the beef, cut in stripes. Once done, take the meat out of the pan and let it sit.

2. Using the same oil let the chopped onion and the tomatoes brown for around 2 minutes. Once this time is up, add the parsley, salt, pepper, the chopped pepper, the soy sauce and the vinegar. Mix everything and cook until the tomato is completely done.

3. Place back the meat on the pan and incorporate the lemon juice. Mix everything once again and let it boil.

4. In the meantime, fry the potatoes and boil the rice with a leaf of laurel and oregano.

5. With the help of a container or kitchen ring, place the rice on the plate. Then add the meat and the potatoes. Sprinkle the beef with the chopped parsley.
