Ingredients:

3 ounces of butter
3/4 cup of sugar
1 egg yolk
1 grated lemon skin or 1 teaspoon of vanilla essence
1 cup of corn starch
1 cup of flour
1 teaspoon of baking powder
Caramel (In Mexico they also use cajeta. If you want, you can replace with the jam of your choice)
Grated coconut

Preparation:

1. Beat the butter and the sugar until there's a creamy mix. Add the yolk and the lemon skin or vanilla, without stopping the mix.

2. Gather the dry ingredients and add them to the creamy mix, making a mass. Then add the flour until it no longer sticks to your hands.

3. Let the mixture sit for 15 to 30 minutes.

4. Cut small circles of the size of your palm. Put them in a previously buttered tray. Insert in the oven, heated to 350º F or 180º C.

5. Remove them right away and join in pairs, glued with the caramel and sprinkle with the coconut.
